Tabasco Spiced Breakfast Pizza. Win R10 000!

I have the following two words to utter right now… BREAKFAST. PIZZA. I know, delicious right? That’s the first recipe that popped into my head when Tabasco asked me to take part in their food blogger challenge. What’s the deal with all of the breakfast pizza action? Tabasco selected four food bloggers they liked the look of, one of them being me (thanks guys). It could have been because EVERYBODY (well, most people) know that I adore hot & spicy sauces. Every day, a Tabasco bottle sees my face. But. Back to competition things (it benefits you too, I promise). Myself & the other bloggers had to come up with a dish that combined two specific ingredients – Tabasco & eggs. Lovely! Breakfast pizza – it all really makes sense.

Naturally, I will provide the recipe down below. BUT. Here’s the important bit… Tabasco will post my recipe & images over on their Facebook page >> Tabasco SA. I SAID R10 000. But we’ll keep things cool, calm & collected & carry on talking about the Breakfast Pizza. Bread, eggs, a spicy tomato sauce, crispy bacon, it’s the sort of breakfast that gets you out of bed. It’s also magnificently easy. Create a really tasty, robust, smoky, spicy & garlicky tomato sauce for the base & you’re winning. Tabasco Garlic Pepper Sauce had me covered for this one.

Here’s how to get a bit of Tabasco glory into your morning….

For the dough:

250g cake flour

5g (1/2 a sachet) dry instant yeast

½ tsp (5ml) sugar

a pinch of salt

2 tbsp (30ml) olive oil

300ml lukewarm water

And then…

Place the flour, yeast, sugar, salt & olive oil in a large bowl & add the water to the dry ingredients. Mix well to incorporate the wet into the dry until a fairly sticky dough starts to form. Turn the dough onto a floured surface & knead for 5-8 minutes, until smooth. Place the dough in an oiled dish, cover with a tea towel & allow to rise in a warm area for 30 minutes.

For the sauce:

2 tbsp (30ml) olive oil

1 cup of chopped fresh tomatoes

1 tin of chopped tomatoes

½ tin of water

4-5 garlic cloves, peeled

½ tsp (2.5ml) sugar

A pinch of smoked paprika

Sea salt & freshly ground black pepper

A good shake of Tabasco Garlic Pepper Sauce

Fresh thyme

And then…

Heat the oil in a small saucepan over high heat. Add the fresh tomatoes & cook for 5 minutes until fairly soft. Add the tinned tomatoes, water, garlic cloves, sugar, smoked paprika & season well with sea salt & freshly ground black pepper. Add a good shake of the Tabasco Garlic Pepper Sauce & a few sprigs of fresh thyme. Bring the sauce to a boil, then lower the heat & gently simmer for 20 minutes, or until thick & reduced.

Toppings:

Eggs

Crispy bacon

Chopped spring onions

Tabasco Garlic Pepper Sauce

And then…

Now, take half of the dough & knead on a floured surface. Shape the dough into a long pizza & place on a greased baking tray. Drizzle with olive oil, add some tomato sauce to the base. Make two wells in the sauce using the back of your spoon. Crack an egg into each well & place in a preheated 220C oven for 15-20 minutes. The base should be crisp & the eggs should still be wonderfully soft.

Garnish with crispy bacon, chopped spring onions & a few additional drops of Tabasco Garlic Pepper Sauce, just before serving.

If you couldn’t be bothered to make your own dough from scratch, simply buy some store bought bread dough. EASY! Add a few slices of fresh avocado & a scatter of crumbled feta – hello delicious!
