Beer. Pumpkin. Chocolate. Cake.

I made this epic (yes… I said epic) cake loaf about three weeks ago. My very, very, very bad for only posting this now *Leila go & sit on the naughty step* – I deserve that! So why was this cake created? I had some beer, *punkin* & @NomuChirps hot chocolate lying about – as one does. I bought a *new* old loaf tin from the charity shop the day before & well, you know, decided to bake. Thank me later people, thank me later…

600g *punkin* peeled, cubed boiled & mashed

100g unsalted butter, softened

1 1/2 cups brown sugar

2 eggs

2 cups self-raising flour

1/2 tsp (2.5 ml) bicarbonate of soda

1 tsp (5 ml) ground cinnamon

1 tsp (5 ml) mixed spice

1/2 tsp (2.5 ml) ground ginger

4 tbsp (60 ml) Nomu Dark Chocolate Pieces

1/2 cup (125 ml) Van Hunks Pumpkin Ale

Topping:

50g brown sugar

100g dried bananna chips

50g pumpkin seeds

1. Preheat the oven to 180C. Grease & line the base & sides of a 6cm deep, 10.5cm & 20.5cm (base) loaf pan. Allow for a 2cm overhang of baking paper on the sides.

2. Using an electric mixer, cream the butter & sugar until pale & fluffy. Add the eggs, beat to incorporate & stir in the pumpkin.

3. Add the flour, bicarbonate of soda, spices & chocolate pieces to the pumpkin mixture. Fold in lightly & add the beer. Combine well & spoon into the prepared tin. Sprinkle with additional brown sugar, dried bananna & pumpkin seeds.

4 Bake for 1 hour – 1 hour 15 minutes, or until a skewer inserted into the cake comes out clean. Remove from the oven & cool on a wire rack.

The housemates smashed piece after piece. I had to save half of it for the office – they also smashed piece after piece… I’d say I did good, I did very, very good *hooha*
